Tradition, with one more turn

In the historic centre of Xàbia, Volta i Volta revives recipes from the Mediterranean tradition and gives them a culinary twist, «or more!», with local produce and a different, contemporary touch.

Turns around the world

Before arriving in Jávea, the Volta i Volta team worked in different parts of the world. From those travels they bring the rigorous method and the taste for fresh produce of Japanese cuisine, the pleasure of eating Italian-style and the importance of herbs and spices from other continents. All of this, they say, invites them to rediscover the simplicity and greatness of the produce of their own land, and here in Xàbia they are at last putting everything they have learned into practice.

Noves tradicions

That is how they sum up their cooking: typical recipes from Valencia and Alicante, interpreted with a personality of their own without losing their traditional character. It is «an unpretentious coastal cuisine», where fresh vegetables, rice, meat and fish take centre stage, with nods to their French and Italian neighbours: a little Normandy butter or a piece of Sardinian bottarga. The ingredients are seasonal produce from the Marina, and the pickles, preserves, syrups and escabeches are one hundred per cent homemade.

Lunch and dinner

At lunchtime they offer a set menu, with the chef proposing starters, a choice of main course and dessert, or a shorter version of the à la carte menu; in the evening, the full menu. Every dish reaches the table with a carefully crafted presentation because, they say, all five senses count in the Volta i Volta experience. Their website displays the badges of a restaurant selected by the MICHELIN Guide and recommended by the Repsol Guide 2026.
