The congress unveils its most international, ambitious and participatory edition yet,  with more than 300 top-tier speakers

With the motto “The Customer Takes Control,” the world’s most influential culinary summit addresses the structural changes in gastronomy, covering everything from the most ancient cooking techniques to foodtech and AI.

 

Benjamín Lana, director of Madrid Fusión, announced that the 2026 edition is “the most international and experiential edition of Madrid Fusión, with top chefs from Brazil, Mexico, Peru, Japan, the USA, China, Hong Kong, the Philippines, France, Italy, the Netherlands, and Portugal. But it is also an edition that marks a structural shift in gastronomy.” This year’s motto, “The Customer Takes Control,” reflects, he said, “the fact that, while in other aspects of life we ​​have become decision-makers, in gastronomy, the customer is moving from being passive to feeling like a protagonist; to being active and rejecting what is obligatory. We are going to talk about how to balance the chef’s creativity with the diner’s freedom.”

 

The Madrid Fusión Foods of Spain forum for thought and reflection will seek answers about the future of food: who decides, what we believe, and how cuisine is changing.

 

Madrid Fusión Dreams #SpainFoodTechNation returns for its third edition, offering a cross-cutting perspective on the future of food, connecting gastronomy, science, health, innovation, sustainability, and culture. Its stage has hosted over 60 participants, including leading chefs, scientists, entrepreneurs, researchers, and communicators from the national and international scene, who addressed topics and questions that are already putting pressure on the food system: what will we eat tomorrow, who decides what ends up on our plates, and what role does food play in the major challenges of our time.
